What: Haystack Mountain Goat Dairy
Where: Niwot
When: Tuesdays and Saturdays, Noon - 2 PM
Hey, Kids!

Hey, you adult Goats, too (a.k.a. Does and Bucks)!
You can even bring your kids (the human kind)
along to see how this working goat farm and dairy manages to create
marvelous cheeses from goat milk. These are deluxe cheeses, with
names like Boulder Chèvre, Queso de Mano, Haystack Peak (shaped like
a pyramid) and Sunlight & Red Cloud (which also happen to be names
of Colorado Fourteeners -- could this be just a coincidence?). In
case your mouth is watering too much to resist, be aware that you
can purchase Haystack Mountain cheeses at the best prices in town
during your visit.
If you're especially keen on seeing kids (baby
goats, that is), the best time of year to visit is from February to
early July. These kids are quite pampered. Staff members attend to
each birth, and the kids are fed pasteurized milk to help prevent
any disease being passed to the little ones.
Did
you know that, compared to cow milk products like cheddar and cream
cheeses, goat cheese is lower in fat, calories and cholesterol?
Plus, goat cheese has greater quantities of potassium, vitamin A,
thiamin, niacin and is rich in protein. Throughout the world, more
people drink goat milk than cow milk, so we Americans are the
exception. Best of all, it tastes great!
Goat bleats can vary quite a bit, and they seem
quite communicative. Listen for a while and see if you can figure
out what they're saying. ("Got milk?")
